Meatless Monday Recipe: TVP Sloppy Joes

Today we are making Sloppy Joes from TVP (Texturized Vegetable Protein). Basically TVP is dehydrated soy protein. It's packed with nutrients and has more protein than meat. TVP is a good source of essential amino acids, and also contributes to calcium and magnesium in one's diet. It can be fortified with vitamins, including B12. It is very high in potassium. And it's super economical. There really is no good reason to eat meat when you have healthier meat substitutes like TVP that also have zero cholesterol, and could feed the world.

You can buy it in bulk at places like Whole Foods. It also comes packaged. Here's what it looks like:

TVP Sloppy Joes

1/2 large onion, diced

1/2 large green pepper, diced

2 Tbl. olive oil

1 1/2 c. boiling water

1 1/2 c. tomato sauce

1 c. ketchup

1 1/2 Tbl. chili powder

1 pinch of pepper

1 t. salt

1 Tbl. soy sauce

1 Tbl. mustard

1 Tbl. sugar

1 1/2 c. dry TVP

Saute onion and green pepper in oil. Add remaining ingredients and simmer for 20 minutes.

You can play with the ingredients. If you don't have ketchup, add more tomato sauce. If you like your sloppy joes runny, add more water or tomato sauce. If you like them spicier, add another pinch of chili powder, etc.

It's that simple!
