My favorite Middle Eastern dish is a simple falafel pita sandwich. Falafel is a deep-fried ball of ground up chickpeas that originated in Egypt. I usually make falafel from a box mix, just add water and let it sit for ten minutes. Falafel is packed with protein and fiber.
Here is the kind I used in the above photo, but there are numerous comparable brands at your local grocery store.
I warm up the pita bread and then spread a homemade tahini sauce. Here's a tahini recipe that I've used (just add more water to make it runnier). I usually add hummus to the pita or as a side dip, and then stuff the pita with three falafel balls and whatever veggies I have on hand: lettuce, tomatoes, olives, cucumbers, or sprouts. If you want to make more of a meal, add a side of couscous.
There you have it! An easy, super quick delicious vegan dinner.
